How did you spend this beautiful day?? I spent mine down in Santa Monica, and while we are in what they call “June Bloom,” it turned out to be a very clear and warm afternoon. I was fortunate to be able to enjoy a nice iced coffee on the promenade where there are tons of shops and “street performers” (for lack of better words). One woman in particular had such a beautiful voice, and graced everyone with the Disney Classics. I tell you, that can uplift just about any mad mood, or at least for me it would! I feel so lucky on days like these where I can relax with a nice cup of iced coffee and watch the beauty of Santa Monica. However, my time was up once Mat got done at the pier and we had to get ready to fight LA traffic. Only, this time we decided to take a windy back road which provided us with a spectacular scenery of LA, it made the long ride more tolerable than sitting through freeway traffic.
Once we got home it was time to make a Meatless Monday meal! As I mentioned earlier, the Meatless Monday campaign is to help promote healthier habits – mainly incorporating a higher volume of fruits and vegetables, since most people do not opt for the leanest form of meat. By devoting one day to go meatless, it is estimated that one would have greater weight maintenance/loss results. Now the only way to truly go through with this is to also limit your “empty calorie” intake.
Here is what I chose to make us this evening – yep, it is yet another stir-fry!
(I know, we really need to get some place-mats, maybe there wouldn’t be such a deep contrast in the background)
This plate of deliciousness includes edamame (your protein source, substituting the meat), zucchini, yellow squash, yellow onions, carrots, red and orange bell peppers, broccoli, boc choy, red lettuce, some red wine vinegar, and oregano. Delicious!
This new Meatless Monday trend might seem somewhat difficult, however, I can assure you that it is much easier than you think. There are plenty of meatless protein sources such as:
Beans, nuts (almonds, walnuts, cashews, etc), nut butter (peanut, almond, etc), edamame, soymilk, tempeh, chickpeas, and lentils.
Try it out, you might be surprised that you actually enjoy meatless meals! And do not forget to incorporate some daily physical activity into your lifestyle. Meatless Monday is just one step towards a healthier lifestyle. If you want optimal benefits, you must be mindful of your diet and incorporating a wealth of moderate to intense physical activity!
