French Toast, Muffins, Yogurt, and NO GUILT!

I have been so bad lately when it comes to whipping up healthy bites in the kitchen, thanks to the lack of time on my hands – it has begun to drive me crazy! Especially when I find myself either resorting to having the same ‘ol thing, or grabbing something out of convenience.
I decided to get up super early to get a few items at the grocery store to whip up a healthy kick-start to our Sunday adventures. The main course, as requested by Mat, was my Fit French Toast. This is a GREAT alternative to traditional french toast, with far less cholesterol and fat.
Karen’s Fit French Toast (makes 3):

3 Slices of Whole Grain Bread (I used Ezekiel Sprouted Grain)
3 egg whites
2-3 TBSP of unsweetened Almond Milk
1 TSP Pure Vanilla Extract
A few dashes of Cinnamon
Wisk together the egg whites and almond milk thoroughly. Add in the extract and cinnamon, mix thoroughly. One by one Take each slice of bread and allow to soak in the mixture for about 30 seconds each side and place on a non-stick pan or griddle set on medium heat. Flip once the cooking side turns golden.
Serve with fresh fruit, and if needed, very light amount of syrup…..please skip the butter 🙂

I also wanted to add in a little sweet indulgence that we haven’t had in a very long time: muffins! So, I picked up a mix of Fiber One Apple Cinnamon mix  while at the grocery (it was the healthiest that they had – only buy this at a last resort due to some of the ingredients in the mix). I recreated the traditional mix-ins, and used a bite-sized cupcake pan that my mom sent us – to help make this indulgence less sinful 🙂

Healthier Mini Fiber One Apple-Cinnamon Muffins (makes 24):
1/2 box mix
3 egg whites
1 TBSP unsweetened natural apple sauce
1/3 cup of water

Preheat oven to 400 degrees. Mix together and pour into mini cupcake wrappers. Bake for about 10-15 minutes. Make sure these are fully cooked by dipping in a toothpick into the middle muffin, and enjoy!
After calculating the ingredients, these en up being about 60 calories each (not too bad!)

To help add an extra sweetness to the french toast, I sliced up long slivers of a banana and tossed them into the pan with low heat and a little bit of vanilla extract to get a nice sweet and warm flavor going to top off the toast. All that served with a side of vanilla yogurt and assorted fresh fruit, makes for a fantastic start to a fun and exciting morning 🙂 The best part is, everything is guilt free, so seconds are almost encouraged!
